TOMATO Charred Tomato And Chicken Taco

Charring tomatoes in a cast-iron skillet yields smoky results.

Yield: 6 servings, 2 tacos each
Ease of Prep: Easy
Recipe Ingredients
1 pound ripe plum tomatoes cored (about 4-5)
2 teaspoons extra-virgin olive oil divided
1 pound boneless, skinless chicken breasts trimmed and cut into 1-inch chunks
Salt & freshly ground pepper
1 large white onion finely chopped (about 1 1/2 cups)
2 cloves cloves garlic very finely chopped
2 jalapeño peppers seeded and very finely chopped
2 tablespoons lime juice
2 tablespoons chopped fresh cilantro
4 scallions chopped
12 corn tortillas warmed
1/4 cup reduced-fat sour cream for garnish
2 limes cut into quarters

Recipe Directions

  1. Heat a large cast-iron skillet over high heat until very hot. Place tomatoes in the skillet and turn occasionally with tongs until charred on all sides, about 10 minutes. Transfer to a plate to cool slightly. Cut in half crosswise; squeeze to discard seeds. Chop the remaining pulp and skins; set aside.
  2. Add 1 teaspoon of the oil to the pan and heat over high heat until the oil is very hot. Add chicken and season with salt and pepper. Cook, stirring occasionally, until the chicken is browned on all sides and no longer pink in the center, about 5 minutes. Transfer to a plate and set aside.
  3. Reduce the heat to medium and add the remaining 1 teaspoon oil. Add onions and cook, stirring, until softened, about 5 minutes. Add garlic and jalapeños and cook, stirring, for 1 minute more. Add lime juice and the reserved chicken and tomatoes. Bring to a simmer and stir in cilantro and scallions. Season to taste with salt and pepper. Cover to keep warm.
  4. Spoon filling into warm tortillas, roll up and serve with sour cream and lime wedges.

Wrap tortillas in barely damp paper towels and microwave on High for 30 to 45 seconds.

Basa Fish Fillet Recipes:
Fish with Red Onion and Red Pepper

This is one of my easiest basa fish fillet recipes. It cooks up easily on the stovetop, uses simple ingredients, looks great and tastes wonderful! You can use any mild white fish: sole, flounder, haddock, cod, or whatever is available where you live.

You can use any mild white fish fillets in this recipe.

If you have fresh parsley available, use 2 Tbsp/30 mL of fresh instead of the dried parsley.

These cooking times are only approximate. Cooking time will depend on the thickness of your fillets, their temperature, and the freshness of the fish. The fish is ready when it is opaque (solid white in color) and when it flakes easily with a fork.

1 Tbsp/15 mL olive oil

1 sweet red pepper, cut in thin strips

1 small red onion, cut in thin slices

2 cloves garlic

1/2 tsp/2 mL dried oregano

1 lb/500 g basa fillets

1 tsp/5 mL dried parsley

In a skillet over medium heat, warm the olive oil.
Add the red pepper. Sauté until the red pepper softens (aboaut 2 minutes).

Separate the red onion slices into rings.
Add the onion rings,garlic and oregano to the skillet.
Cook, stirring occasionally, until the onions are soft (about 3 minutes).
Push the vegetables to the edge of the pan (or remove them to a small skillet and keep them warm.)

Add the fish to the skillet.
Cook for about 5 minutes.
Turn the fish over.
Cook until the fish flakes easily with a fork (about 5 more minutes).

Remove the fish to the serving platter or plates.
Sprinkle with parsley and season with pepper to taste.
Spoon the red pepper mixture over the fish and serve immediately.

Crock  pot Barley Vegetable Soup

This thick and hearty soup is packed full of nutrition. With barley, tons of veggies, and sweet potatoes, no one will miss the meat.

Prep Time: 20 minutes

Cook Time: 8 hours

Total Time: 8 hours, 20 minutes

Ingredients:

  • 1 cup medium pearl barley
  • 1 bay leaf
  • 1/2 tsp. fennel seed
  • 9-oz. pkg. baby carrots
  • 1 onion, chopped
  • 2 stalks celery, chopped
  • 3 garlic cloves, minced
  • 2 sweet potatoes, peeled and chopped
  • 2 cups frozen corn
  • 2 cups frozen green beans
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 3 (14 oz). cans vegetable broth
  • 4 cups water
  • 14-oz. can diced tomatoes with herbs, undrained

Preparation:

Place all ingredients except tomatoes in a 5-6 quart crockpot in the order given. Do not stir. Cover crockpot and cook on low for 6-8 hours. Stir soup and add tomatoes. Cover crockpot and cook for 10-15 minutes longer until soup is hot. Remove bay leaf before serving. 10 servings

Crown Roast of Pork

An easy yet impressive main dish, crown roast of pork is served with a savory mushroom stuffing.

Servings: 16 servings

Ingredients
8 to 10 pounds  pork crown roast (about 16 to 18 ribs)
2 teaspoons   salt
1 teaspoon   pepper
Mushroom Stuffing
2/3 cup   butter or margarine
2 medium stalks celery, chopped (1 cup)
1 medium onion, finely chopped (1/2 cup)
1 pound  fresh mushrooms, sliced (6 cups)
8 cups   unseasoned croutons
1 tablespoon   chopped fresh or 1 teaspoon dried sage, thyme or marjoram leaves
1 teaspoon   poultry seasoning
1 teaspoon   salt
1/2 teaspoon   pepper
Directions

1. Heat oven to 325 degrees F. Sprinkle pork with salt and pepper. On rack in shallow roasting pan, place pork with bone ends up. Wrap bone ends in foil to prevent excessive browning. Insert ovenproof meat thermometer so tip is in thickest part of pork and does not touch bone or rest in fat. Place small heatproof bowl or crumpled foil in crown to hold shape of roast evenly. Do not add water.
2. Roast uncovered 2 hours 40 minutes to 3 hours 20 minutes.
3. Meanwhile, make Mushroom Stuffing. About 1 hour before pork is done, remove bowl and fill center of crown with stuffing. Cover stuffing with foil for first 30 minutes.
4. Remove pork from oven when thermometer reads 150 degrees F; cover with tent of foil and let stand 15 to 20 minutes or until thermometer reads 160 degrees F. (Temperature will continue to rise about 10 degrees F, and pork will be easier to carve.) Remove foil wrapping from bone ends. To serve, spoon stuffing into bowl and cut pork between ribs.
Method for Mushroom Stuffing:
1. In 4-quart Dutch oven, melt butter over medium heat. Cook celery, onion and mushrooms in butter about 3 minutes, stirring occasionally, until tender.
2. Stir in half of the croutons. Cook, stirring frequently, until evenly mixed and croutons are softened. Stir in remaining croutons and ingredients. Stuff turkey just before roasting. Or spoon stuffing into ungreased 3-quart casserole or 13×9-inch glass baking dish; cover and bake at 325 degrees F for 30 minutes, then uncover and bake 15 minutes longer.

Cheesy Ham Pasta

Cheesy Ham Pasta is a delicious and comforting main dish recipe that uses chopped ham, onion, green bell pepper, and two kinds of cheese sauce. The nacho sauce gives the sauce a bit of a kick.

Prep Time: 15 minutes

Cook Time: 15 minutes

Total Time: 30 minutes

Ingredients:

  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 large green bell pepper, chopped
  • 2 cups chopped ham
  • 1 (17-ounce) bottle double cheddar sauce (Ragu)
  • 1/2 (15-ounce) jar nacho cheese dip
  • 1/3 cup milk
  • 1 (16-ounce) package fettuccine pasta

Preparation:

Bring a large pot of water to a boil. Meanwhile, in large skillet, heat butter and olive oil over medium heat. Add onion and garlic; cook and stir 3 minutes. Add bell pepper and ham; cook and stir 4-5 minutes longer until tender.Add pasta to water and stir. Then add sauce, cheese dip, and milk to mixture in skillet. I use the milk to rinse out the bottles of sauce so you get it all out. Bring to a simmer, reduce heat to low, and simmer while the pasta cooks.

When pasta is done, drain and place on serving plate. Spoon sauce over and serve immediately. Serves 6
