Cheesy Chicken Rice Casserole


1 can (10 3/4 ounces) Campbell’s® Condensed Cream of Chicken Soup  (Regular, 98% Fat Free or Healthy Request®)

1 1/3 cups water

3/4 cup uncooked regular long-grain white rice

1/2 teaspoon onion powder

1/4 teaspoon ground black pepper

2 cups frozen mixed vegetables

4 skinless, boneless chicken breast half  (about 1 pound)

1/2 cup shredded Cheddar cheese

  • Heat the oven to 375°F.  Stir the soup, water, rice, onion powder, black pepper and vegetables in a 2-quart shallow baking dish.
  • Top with the chicken. Cover the baking dish.
  • Bake for 50 minutes or until the chicken is cooked through and the rice is tender. Top with the cheese. Let the casserole stand for 10 minutes. Stir the rice before serving.
  • Serving Suggestion: Serve with a Caesar salad. For dessert serve frozen Italian-style water ice or gelati.
  • Alfredo: Substitute broccoli flowerets for the vegetables and substitute 1/4 cup grated Parmesan for the Cheddar cheese. Add 2 tablespoons Parmesan cheese with the soup. Sprinkle the chicken with the remaining Parmesan cheese.
  • Lower Fat: Use Campbell’s® 98% Fat Free Cream of Chicken Soup instead of regular soup and use low fat cheese instead of regular cheese.
  • Mexican: In place of the onion powder and black pepper use 1 teaspoon chili powder. Substitute Mexican cheese blend for the Cheddar.
  • Italian: In place of the onion powder and black pepper use 1 teaspoon Italian seasoning, crushed. Substitute 1/3 cup shredded Parmesan for the Cheddar.

William JoelBuckyCovington III (born November 8, 1977) is an American country music singer. He placed eighth on the 5th season of the Fox Network’s talent competition series American Idol. In December 2006, he signed a recording contract with Lyric Street Records. His self-titled debut album, produced by Mark Miller of the band Sawyer Brown, was released on April 17, 2007. The album debuted at #1 on the Billboard Top Country Albums chart, and produced three hit singles on the Hot Country Songs charts: “A Different World” at #6, “It’s Good to Be Us” at #11, and “I’ll Walk” at #10.

Bucky has a identical twin brother, Robert David “Rocky” Covington. Bucky is the nickname derived from his grandfather “Buck”. At the age of 18, Covington taught himself how to play the guitar and began performing at clubs. He is also a bassist, drummer and songwriter. Over the years, Covington has expanded his talents, both country and rock.In 1998 when the Covington twins were 20 years old, they were in a minor automobile mishap. Bucky allegedly pretended to be Rocky. They were arrested for deceiving the authorities. The plaintiff failed to identify which twin was driving, since the twins were identical.[2]

After Idol, Bucky bought a house in Franklin, Tennessee, near Nashville, which he shared with Rocky and his wife Terra. Rocky also joined Bucky’s band as a drummer.

In January 2009, Lyric Street noted that Covington has been in the studio recording his second album. The lead-off single, “I Want My Life Back” was released to radio in April 2009 and it peaked at #32. The album is expected for release sometime in 2010. In early October 2009, Covington released a cover version of Nickelback’s hit single “Gotta Be Somebody”. The song is the second single from Covington’s upcoming album, I’m Alright and peaked at #51 in December 2009 after spending only three weeks on the chart. The album’s third single, “A Father’s Love (The Only Way He Knew How),” was released in March 2010.

How competitive was Sunday’s Aaron’s 499 at Talladega Superspeedway? From a standpoint of official leaders and lead changes, it would be easier to list those drivers who didn’t find their way to the front. The lead changed 88 times over the 200-lap distance, setting series records in both instances. But the only lead change the really matters if the last one of course… and that was a change at the last second.

In the third and final attempt at a green-white-checkered finish, Harvick pushed 2010 Daytona 500 winner Jamie McMurray for all but the final quarter-mile of the final lap before surging past McMurray to the inside and beating the No. 1 Earnhardt-Ganassi Chevy to the line by .011 seconds.

“It really played out perfect for us today,” said Harvick, who won for the 12th time in the Cup Series and for the first time at Talladega. “We had a plan to ride around in the back, wait ’til 50 laps to go and really push forward after that.

The first attempt at a green-white-checkered finish ended early when Joey Logano turned Ryan Newman while bump-drafting in Turn 3 and ignited a nine-car accident. The second attempt eliminated Jimmie Johnson and took a major bite out of his lead in the series standings after he turned across the nose of Greg Biffle’s Ford and careened into the inside wall.

With several big wrecks through out the day… the shuffle of point standings and placement of cars at the end was outstanding.

One of the advantages of owning a small dog is that they are very easy to bathe at home, though, at times it can be difficult. Often small dogs are frightened by the noise and activity of a high volume pet salon. Why not save yourself the expense and your dog’s nerves by following these simple steps for bathing your small dog at home?

    Collect the materials you will need so you will have everything close at hand. These materials generally include combs and brushes, pet shampoo, clean towels, and perhaps doggie treats. If you think about cleaning the dog’s ears, then getting some cottonAllow your dog time to adjust to the idea of getting a bath. If you have a puppy, or a new pet, the whole process may be somewhat frightening, so take things slowly. Help your dog to associate the tub or sink with pleasant things by placing the rubber mat in the tub and feeding meals there. Be ready to hand out lots of praise and a few treats to make the bath a pleasant experience for your dog. It will pay off in the long run if your pet is a happy participant, rather than frightened or resistant.

    Groom your dog’s coat before bathing to remove loose dirt, mats and snarls. Tangles in your dog’s coat will be much harder to remove once his coat is wet.     Decide whether you will bathe your dog in the bath tub or kitchen sink. This is not only a question of your dog’s size. It is also important to judge whether your dog is likely to remain calm and obedient during his bath. If there’s any chance he might jump away from you, you should bathe your dog in a bath tub, rather than risk a fall from the kitchen sink. Another option is to take your dog with you right into the shower. You will get wet anyway so why not kill two birds with one stone! Sounds silly but it works.

    Place either a rubber mat or a small towel on the bottom of the sink or bath tub. This will keep your pet from slipping on the wet surface, and will help him feel more comfortable.

    Test the water temperature before beginning to wet your dog’s coat. Keep your hand in the water to make sure the water temperature is correct. If you’re using the kitchen sink, the spray hose attachment makes it easy to wet your dog down. Sprayers emit a sound that affects some dogs so you may wish to have a small plastic pitcher handy to pour water over your dog. Spray attachments are also available for your bath tub to make bathing your dog easier.

    Use a shampoo designed specifically for pets, rather than your own personal shampoo. Quality pet shampoos take into consideration that a dog’s skin has a different pH level than human skin. There are also tear-free shampoos that will not sting a dog’s eyes. (Keep in mind that just like human tear-free shampoos, they simply contain an eye-numbing agent, and the soap exposure can still damage the eyes. Keep all shampoo, tear-free or not, out of the eyes as much as possible.) A great smelling conditioner is also a nice addition. Consult your veterinarian if your dog has skin irritations or other conditions. Dilute the shampoo and apply from a squeeze bottle (like a dishwashing liquid) so you can squirt the shampoo wherever you wish.

    Avoid getting water or shampoo in your pet’s eyes and ears. You can gently place a cotton ball in your pet’s ears to help keep the inner ear dry. Rather than using the spray hose on your pet’s face, your pet will be happier to have his face cleaned gently with a warm, wet wash cloth.

    Rinse all shampoo out of your dog’s coat thoroughly.

    Blot up the water left in his coat by wrapping your dog in a bath towel. Change towels as needed to continue drying your dog’s coat. Let his coat air dry once you have blotted up as much water as you reasonably can.

    Blow-dry your dog’s coat to get your dog dry more quickly, if your pet will tolerate this. Always use a low-temperature setting (warm or cool) to avoid inadvertently burning your dog’s skin. Using a lower fan setting will undoubtedly be easier for your dog to endure. Some dog hair gets very static-y. There are sprays that limit this, help keep the hair smooth and easier to brush.

    Praise your dog and give him a tasty treat as a reward for good behavior. He’ll quickly learn that getting a bath is not a frightening experience.

roast beef wrap

Roast Beef Wrap

• 1/3 cup light cream cheese (neufchatel cheese)
• 1 1/2 tablespoons horseradish mustard
• 2 tablespoons finely chopped green onions
• 4 – 8 inch fat-free flour tortillas
• 1 – 7 ounce bottle roasted red bell peppers, drained, chopped
• 1/2 pound lean deli roast beef, very thinly sliced
• 4 leaves green leaf lettuce

Combine first 3 ingredients; spread evenly over tortillas. Sprinkle red bell pepper over cheese mixture. Top evenly with roast beef and lettuce.

Roll up tightly, cut each roll in half and wrap in plastic wrap and refrigerated until ready to serve.
