Meal and a Movie – “Family Night”

Almond-Crusted Chicken Dinner:

Rather than a heavy coating, these chicken fingers are lightly covered in a spicy ground almond and whole-wheat flour mixture that’ll have the kids forgetting about fast food and begging for this dinnertime treat.

Prep Time: 20 minutes
Ready in: 40 minutes
Yield: 4 servings
Ease of Prep: Easy
Recipe Ingredients
Canola oil cooking spray
1/2 cup sliced almonds
1/4 cup whole-wheat flour
1 1/2 teaspoons paprika
1/2 teaspoon garlic powder
1/2 teaspoon dry mustard
1/4 teaspoon salt
1/8 teaspoon freshly ground pepper
1 1/2 teaspoons extra-virgin olive oil
4 egg whites (see Ingredient note)
1 pound chicken tenders

Recipe Directions

  1. Preheat oven to 475°F. Set a wire rack on a foil-lined baking sheet and coat with cooking spray.
  2. Place almonds, flour, paprika, garlic powder, dry mustard, salt and pepper in a food processor; process until the almonds are finely chopped and the paprika is mixed throughout, about 1 minute. With the motor running, drizzle in oil; process until combined. Transfer the mixture to a shallow dish.
  3. Whisk egg whites in a second shallow dish. Add chicken tenders and turn to coat. Transfer each tender to the almond mixture; turn to coat evenly. (Discard any remaining egg white and almond mixture.) Place the tenders on the prepared rack and coat with cooking spray; turn and spray the other side.
  4. Bake the chicken fingers until golden brown, crispy and no longer pink in the center, 20 to 25 minutes.

Ingredient Note: Dried egg whites are convenient in recipes like this one because you don’t have to figure out what to do with 4 egg yolks. Look for powdered brands like Just Whites in the baking aisle or natural-foods section or fresh pasteurized whites in the dairy case of most supermarkets.

A Rainy Memorial Day Weekend Race, creates a new winner!

David Reutimann was the big winner in NASCAR’s losing battle against Mother Nature in Monday’s rain-shortened 24 Hours of the Coca-Cola 600 Sprint Cup race at Lowe’s Motor Speedway.

Nearly 25 hours after the 50th edition of the race was supposed to start, and with menacing storm cells dotting the radar, NASCAR called the event after 227 of a scheduled 400 laps. That made a first-time winner of Reutimann, who parlayed a strategic call by crew chief Rodney Childers into the unlikely victory.

The win in NASCAR’s longest race, which was postponed from Sunday because of rain, was the first for Michael Waltrip Racing — now in its third season of Cup competition — and the first for a Toyota team other than Joe Gibbs Racing. Reutimann led five laps, all under the final caution. He was running 14th when rain started falling on Lap 221.

Very finely chopping onion, mushrooms and carrots in the food processor is not only fast–it makes the vegetables hard to detect for picky eaters. They also form the base for the sauce of this ground beef skillet supper. Make it a meal: Serve with a green salad.

Yield: 6 servings, about 1 1/3 cups each

Recipe Ingredients
3 cloves garlic , crushed and peeled
2 medium carrots , cut into 2-inch pieces
10 ounces white mushrooms , large ones cut in half
1 large onion , cut into 2-inch pieces
1 pound 90%-lean ground beef
2 teaspoons dried thyme
3/4 teaspoon salt
1/4 teaspoon freshly ground pepper
2 cups water
1 14-ounce can reduced-sodium beef broth , divided
8 ounces whole-wheat elbow noodles (2 cups)
2 tablespoons Worcestershire sauce
2 tablespoons all-purpose flour
1/2 cup reduced-fat sour cream
1 tablespoon chopped fresh parsley or chives for garnish

Recipe Directions

  1. Fit a food processor with the steel blade attachment. With the motor running, drop garlic through the feed tube and process until minced, then add carrots and mushrooms and process until finely chopped. Turn it off, add onion, and pulse until roughly chopped.
  2. Cook beef in a large straight-sided skillet or Dutch oven over medium-high heat, breaking it up with a wooden spoon, until no longer pink, 3 to 5 minutes. Stir in the chopped vegetables, thyme, salt and pepper and cook, stirring often, until the vegetables start to soften and the mushrooms release their juices, 5 to 7 minutes.
  3. Stir in water, 1 1/2 cups broth, noodles and Worcestershire sauce; bring to a boil. Cover, reduce heat to medium and cook, stirring occasionally, until the pasta is tender, 8 to 10 minutes.
  4. Whisk flour with the remaining 1/4 cup broth in a small bowl until smooth; stir into the hamburger mixture. Stir in the sour cream. Simmer, stirring often, until the sauce is thickened, about 2 minutes. Serve sprinkled with parsley (or chives), if desired.

Featured Artist: Kellie Pickler: Kellie Dawn Pickler (born June 28, 1986) is an American country music artist and television personality. She gained fame as a contestant on the fifth season of the FOX reality show American Idol, eventually finishing in sixth place. In 2006, she signed to BNA Records as a recording artist, releasing her debut album, Small Town Girl, late that year. The album, which was certified gold by the RIAA, produced three singles on the Billboard Hot Country Songs charts: “Red High Heels” at #15, “I Wonder” at #14, and “Things That Never Cross a Man’s Mind” at #16. The first single from her self-titled second album is “Don’t You Know You’re Beautiful”. It was released in mid-2008 and reached the Top 25. The second single from her self-titled album is “Best Days of Your Life” which she co-wrote with Taylor Swift.

“Don’t You Know You’re Beautiful,” is more than a song, it’s a statement from Kellie Pickler, who chose the upbeat tune to lead off her self-titled second album. Urging inner strength, independence and confidence, the first single from Kellie Pickler introduces Kellie as she is today, a resilient young woman who has wrestled with insecurity, endured tragedy, suffered heartbreak and celebrated triumph on a winding road to maturity, self-awareness and newfound happiness.
